The Seven Acre Dairy Company in Paoli, Wisconsin, is a beautifully renovated historic site that once housed one of the largest cheese factories in the state. Originally built in 1888 as the Paoli Cheese Factory, it operated until 1980 and has now been transformed into a vibrant destination that honors its dairy heritage.

The restoration project reimagines the space as a boutique inn, farm-to-table restaurant, dairy café, and micro-dairy plant. The facility now includes:

  • Eight-room boutique hotel with modern amenities and historic charm
  • Little Cloud restaurant and a café offering locally inspired cuisine
  • Micro-dairy plant producing soft serve ice cream and butter
  • Partnership with Landmark Creamery and local dairy farmers like the Sarbackers, who supply fresh milk
  • Walking trails and event spaces for weddings, gatherings, and community events

The building is listed on both the State and National Registers of Historic Places, preserving its legacy while creating a unique experience for visitors
